Ian Smith is a vanishing breed. He is an independant dairyman. As with many independants he has seen his business eroded by the super markets. Not to be out done he diversified. He was one of my first customers for honey. 
Handmade food is all about provenance. After all it is why the public seek out sustainable and ethically produced products. The Bee Farmer has a way to demonstrate the provenance of his honey using a tracking engine. 
I am often asked why my honey jars say "Made in England" on the label rather than name a county. It is all to do with where the bees live and the rules on labeling. 
Raw Honey is often referred to as “liquid gold” due to its highly therapeutic antibiotic, antifungal, antiviral, antiseptic, anti-aging and anticancer properties. Raw honey is not filtered, strained, or heated above 115 degrees Fahrenheit and provides far more benefits than regular honey as it is full of active enzymes, amino acids, vitamins, minerals, and fatty acids that are vital for keeping the body health and for preventing illness and disease
