Honey in the comb is a pure as honey gets. The frames are harvested from the hive and sections of comb are cut by hand from the frames then popped into a box. It is literally straight from the hive.
Heather honey is rightly seen as a king of honeys. The flavour and aroma is rich and deep. The honey is subtly earthy and intensely fragrant, hints of caramel and the faintest suggestion of smoke at times.
There is a great deal of work in producing honeycomb. The hives need to be placed high on the moors of North Yorkshire in August. If the weather is kind the bees will produce an excess of honey. Then the sticky business of selecting the best comb, cutting and packing. But it's worth all of the effort that goes in to winning the honey.
